Mykonos Cuisine
Louza
Probably the most characteristic and famous local snack of Mykonos, Louza is one type of sausage. It is made of cooked pork meat and beef, but what gives Louza its delicious flavour is the type of meat used in its production. The people of Mykonos invented the formula of this mouthwatering appetizer hundreds of years ago when they cooked in a special way the quality meat taken from the back of the animal with the bit of the fat that covers it.
Kopanisti
Kopanisti is a very spicy form of local cheese that is appreciated for its special peppery taste. It excellently accompanies ouzo and any other strong Greek aperitif, on bread or, in the Mykonian way, on sop barley rusk, together with tomatoes or cucumber. It can also be mixed with butter or some other white cheese to produce a lighter taste, but then the mixture cannot be preserved.
